Water mimosa ‘Pak Krachet’ in Thai, is a legume growing in fresh waterways in tropical regions. The plant floats on the water surface thanks to buoyant white tissue that grows as a wrapper around the stems.
‘Pak Krachet’ is widely used in Thai cuisine it has a distinct umami flavor a bit like sataw beans. The vegetable is commonly used in stir-fries, salads and curries, namely in ‘Pad Pak Krachet’ a stir-fry dish, ‘Yum Pak Krachet’ a salad and a curry known as ‘Gaeng Som’.
To prepare ‘Pak Krachet’, remove the white tissue and roots and use younger stems and leaves.
